Popcorn Cauliflower

This recipe comes from Susie Fishbein’s Kosher by Design cookbook. The only change we made was scaling the spice rub by 25x so we can keep a jar on hand. That way, whenever we want to make it, all we have to do is add olive oil to the cauliflower and toss it.
It’s simple, reliable, and works with just about anything.

Equipment

  • 1 set of measuring spoons
  • 1 mixing bowl
  • 1 cookie sheet
  • 1 piece of parchment paper
  • 1 set of food safe gloves

Ingredients
  

  • 2 bags 800 grams frozen cauliflower that equal 2 heads
  • 2 tsp sugar
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp turmeric
  • 6-8 tbsp olive oil

Instructions
 

  • Preheat oven to 450℉ / 233℃
  • Combine all ingredients in a large mixing bowl
  • place on cookie sheet in a single layer
  • roast for 30-35 minutes until the largest pieces can be pierced by a fork / if the tops start getting too brown toss the cauliflower
