Lemon Bars

One of the perks of having a lemon tree in our yard is always having fresh lemons! 🍋 My daughter found this lemon bar recipe in an old family cookbook from Chicago. We swapped the regular flour for Bob's Red Mill Gluten Free 1 to 1 Baking Flour, and they came out delicious. Definitely not low calorie, but definitely worth it!

Cook Time 39 minutes

Equipment

  • 1 set of measuring spoons
  • 1 measuring cup
  • 1 9"x13" pan
  • 1 grater
  • 1 sifter
  • 1 whisk

Ingredients
  

  • For the Crust
  • ¾ cup shortening / we used coconut oil
  • cup confectioners’ sugar
  • cups gluten free flour (sifted)
  • For the Filling
  • 3 eggs
  • cups sugar
  • ¼ tsp salt
  • 3 tbl gluten free flour
  • cup lemon juice
  • ¼ tsp lemon rind (grated)
  • non stick spray

Instructions
 

  • Preheat oven to 350℉/175/180℃
  • Spay pan with non stick spray
  • Crust
  • Combine shortening, sugar, and flour; blend. (we did it by hand)
  • Pat into a 9 × 13-inch baking pan and bake
  • Place in oven and 15–20 minutes, or until crust is golden brown
  • Filling
  • Beat eggs with sugar
  • Add flour, salt, lemon juice, and rind and blend thoroughly
  • Pour onto hot crust and bake 20 minutes
  • Remove from oven and sprinkle with confectioners’ sugar
  • Cut into squares
