Kosher Meat Gluten Free Recipes

As I had mentioned on the previous page we keep a Kosher house.  The word “kosher” has become associated with the connotation of “proper” or “acceptable” in English. However, kosher laws derive from the Bible and are expounded upon in the Talmud and other Jewish tradition codes.

We define food as meat, dairy or Pareve.  Foods that are meat are either chicken, beef or lamb, dairy is any food that has dairy in it and  Pareve are foods which have neither meat or dairy such as fruits, vegetables, eggs and other items.

This page is subdivided into poultry gluten free meals and beef gluten free meals. From a Kashrut perspective both are classified as meat.

Kosher meat Gluten Free Recipes — Poultry

Smoked Turkey on a Pellet Smoker 

Ingredients:
1 spatchcocked turkey or 1 boneless turkey breast
Water
1 cup sugar
½ cup salt
3 oranges
3 lemons
bottle of sweet white wine
BBQ  seasoning

Instructions:

  1. Create a brine
    bring 4 cups of water to a boil
    add the sugar and the salt. Stir until the sugar and salt are dissolved.
  2. Let sit overnight to chill ( the reason for doing this is so you do not start cooking the turkey and then not cook it enough. This can cause bacteria to grow and lead to food poisoning. 
  3. Let the turkey sit in the refrigerator overnight for 12 to 16 hours.
    The next day
  4. Turn on the pellet smoker to 250 Fahrenheit or 122 Celsius
  5. Slice the oranges and lemons
  6. Place some of the slices on the bottom of the  pot
  7. Add the turkey to the pot
  8. Cover the turkey with the brine
  9. Add the remainder of the lemons and oranges to the pot
  10. Cover the turkey and fruit slices with cold water until the turkey is completely submerged and place the pot into the refrigerator
    The Next Day
  11. Take the turkey out of the brine and place it on baking sheets or into a stainless steel roasting pan
  12. Generously cover the turkey with your favorite BBQ rub
  13. Cover the bottom of the pan with a sweet white wine
  14. Place the turkey in the smoker for about three and half hours or until the turkey reaches an internal temperature of 165 Fahrenheit or 74 Celsius. This take about three to three and half hours.
  15. After two hours see if you need to add more wine to the bottom on the pan.
  16. I check the internal temperature after two and a half hours. Then I set an alarm to check it every 15 minutes to ensure the turkey doesn’t get overcooked. 
  17. Let the turkey sit for half an hour or refrigerate and eat at room temperature over the next couple of days

Sesame Chicken Recipe

I made it last week and my daughter says that it was delicious and I agree and it is easy too. 

The original recipes was for 1.5lbs of ground chicken. I used a kilo or 2.2. lbs or dark meat chicken pargot

From start to finish it took about 45 minutes. 

 

Ingredients for the chicken marinade:

1 kilo pounds ground chicken
2 heaping teaspoons of minced garlic
.75  tsp. Black pepper
2 tbsp. Dried parsley
3 tbsp. Soy sauce
1/2  cup corn starch

For the Sesame sauce :
6 tbsp soy sauce
7  tbsp. Honey
1/2  cup ketchup
3  tbsp. Rice vinegar
2 tsp. Minced garlic
4  tbsp. Sweet Chili sauce
Sesame seeds

Instructions:

-1- Mix chicken marinate ingredients together in a large bowl.
-2- Heat up your frying pan with the bottom covered in olive oil and  about .33 cups of sesame oil.
-3- Add the chicken mixture into the frying pan and make a big pattie
-4- Let it cook for about 5 minutes on a low flame
-5- Using tongs, flip over the chicken in large portions once you have a nice crispy bottom.
-6- Cook for another 4-5  minutes.
-7- Then using your tongs or fork, break the chicken up into bite size chunks.
-8- Add sesame sauce and mix together to coat the chicken.
-9- Let the sauce cook down for a few minutes.( I found that the longer I let it sit the better it tasted. 
-10- Sprinkle the  sesame seeds on the chicken
-11- Serve over rice with a side of Broccoli.

Lazy Man Chicken Fiesta a Gluten Free Recipe

Ingredients:
2 Lb or 1 kilo boneless chicken breast or legs and thighs or whatever you prefer
1 jar salsa

Instructions:

  1. Arrange chicken in a visual pleasing way in a pan
  2. Pour salsa over the chicken evenly
  3. Cover tightly
  4. Bake at 350 Fahrenheit of 167 Celsius for about 45 minutes without bone or closer to an hour with bones

Serve with rice and roasted vegetable of your choice I recommend broccoli.

Beef Special a Gluten Free Meal

When we lived in Chicagoland we used to go to a restaurant called Tabou Grill. One of our favorite selections on the menu was the beef special. This is my attempt to recreate it.

Ingredients:
2 Lb or 1 kilo of beef  (works with most types meat we use a cut called goulash in Israel)
2 large or 3 normal size purple onions
olive oil
2 heaping tables spoons frozen pureed garlic
fine salt and white pepper powder
about a 1/2 a bag of frozen mushrooms or 2 cartons of fresh mushrooms

Instructions:

  1. Cut beef into small pieces
  2. slice the onions into thin pieces
  3. cover the bottom of the frying pan with olive oil
  4. place the sliced onions on olive oil on a low flame
  5. place the cut meat onto the onions
  6. add pureed garlic
  7. here comes the shitteryne method
    spinkle fine salt and white pepper powder over the meat
  8. add mushrooms
  9. cook on a low flame until the meet is cooked stirring regularly

Serve with rice, mashed potatoes, roasted vegetables of zucchini in tomato sauce.
